Preparation
- Cook rice according to package directions.
- Drain and rinse the beans and corn.
- Once the rice has finished cooking transfer to a large mixing bowl.
- Add the beans, corn and salsa to the rice and mix thoroughly.
- transfer about 1/4 of the rice mix into a serving bowl.
- Sprinkle each serving with the shredded cheese.
- Top with additional items such as canned jalapeños, cilantro or canned diced green chilies.
